For Lunch, Dray and I ate leftovers. No picture. Because it was just leftovers. They were yummy though!
For Dinner I was craving Mexican food. So I made up a tortilla soup minus the tortilla chips. Limey, brothy, peppery, oniony, chickeny, soup. I sauteed onion, jalapeno, green bell peppers, garlic, and then some tomatoes. Then added chicken broth, lime juice, a can of diced tomatoes, and cilantro and cooked chopped up chicken. Then I added a cup of pinto beans and what was left over of some rice from the other night too...cause they were in the fridge and I wanted them gone. I then went to add salt but didn't realize that the top part had been turned to the pour it out side instead of the small holes side... so I poured probably 1/4 a cup of salt into it all. I swore a lot. And then added a ton more chicken broth, more canned diced tomatoes, coconut milk, more water, and some tomato paste, and more lime to try and save it. It still was a little salty but then after I added a ton of avocado to the bowl and green onions it all tasted just fine. Good even. Hit the Mexican food spot well enough. Dray loved it as usual, and picked out pieces of chicken and random beans to show me. He was said are you happy?? Whenever he found a bean or chicken. What a silly kid. Avi chose to stuff her face with cottage cheese, cheddar cheese, chicken, and threw her avocados on the floor. This girl does not like avocado.
Ok so today for breakfast we had one of those awesome chocolate almond shakes, for lunch the kids and I finished off leftovers, and for Dinner I made Pesto Spaghetti squash from the Detox Book. I used pine nuts, cilantro, olive oil, garlic, and salt for the pesto sauce. And then I added some bacon and lemon juice to top it off at the end. It was really really good.
Dray then helped me make some breakfast apple streusel egg muffins from the book too for tomorrow.
Although we ate a lot of them so there aren't many left for tomorrow. The kids loved them. I thought they kind of tasted like...well nothing, if I'm being honest.
Eggy foamy nothing, with a splash of apple mush. I liked the apple mush parts. I didn't not like them...they were just kind of there. And I ate them. Dray could hardly wait for them to come out of the oven. And he and Avi pounded two in seconds. So they must have liked them. On to grocery shopping tomorrow for the rest of the week! Last full week here we go.
